Here are some simple instructions to prepare your tofu.

Drain as much water as possible |

Cut in two, width wise |

Turn the tofu on the other side and cut 4 cutlets |

Put the tofu on a dish towel, folded in 3 lenght wise.
Put 4 cutlet of tofu (1/2 a pack) on one end of the towel (you should cover only 1/2 of the towel surface) |

Line top of tofu with paper towel (on top of tofu).
Wrap the other part of the towel on top of tofu |
|
Press on the towel to squeeze the water out |
|
Cut the tofu based on recipe instructions |
Some tips:
- Green tip: reduce your paper towels consumption by buying some flour sack towels or dish towel, dedicated to cooking. I like the flour sack towels; you can find them on Amazon. The pictures above are using 2 paper sack towels (instead of paper towels). Or, as an alternative, keep the paper towels and dry them. You can use them for next time or anything else.
- No time to press your tofu? Don't worry, the difference is marginal
- A fun way to prepare your tofu is to dry it (per instruction above), freeze it, then re-do the same process. The texture is completely different.
